It's all the earthquakes we have there, they tend to level things out!
There is quite a bit of lava under the soil but after the last "ice age" ~10.000 years ago, this part was largely under water and when the land rose it left a lot of arable soil behind.
Today this is the largest farming area of Iceland.
That wing is quite famous you know!
